Cucumber Avocado Nori Rolls

Here’s some healthy snacking inspiration! Tara often recommends these Cucumber Avocado Rolls wrapped in Japanese nori to her health-coaching clients, which are super quick, easy, and filled with LOADS of nutrient-dense goodness. 

This simple recipe is full of healthy fats, hydrating nutrients, and tons of minerals, making it a superfood snack. What’s so great about these nori rolls is that you can really tailor them to your taste. The base of cucumber and avocado can be enhanced with ingredients like hummus, sprouts, and our personal favorite sauerkraut. We’re always trying to get our probiotics in, and fermented vegetables are one of the best ways to do that. Sneaking some into these rolls is definitely a strong move…

GLOW TIPS:

1. Make sure to remove the excess water from the sauerkraut before placing it onto the rolls
2. Pick out a crisp cucumber, and make sure to taste it beforehand to avoid bitterness

CUCUMBER AVOCADO NORI ROLLS

INGREDIENTS:

  • 1 sheet nori seaweed (available from natural food stores and Japanese markets)
  • 1 large cucumber, thinly sliced with a mandolin slicer
  • toasted sesame seeds
  • ground chili powder (optional)
  • 1/2 ripe avocado, sliced into thin wedges
  • 1/4 cup sauerkraut
  • soy sauce, for serving
Optional additions // get creative!
  • fresh herbs, like mint, cilantro, or shiso
  • sprouts
  • hummus
  • kimchi paste
  • radishes, sliced thinly with mandolin
  • extra greens, like kale or spinach
  • extra veggies like carrots, jicima, or celery, cut into strips
  • green onion, sliced thinly

DIRECTIONS:

1. Place a sheet of nori on a clean and dry cutting board, shiny side facing down and longest edge facing you

2. Starting from the top edge, arrange the cucumber slices in overlapping rows on the nori, leaving a 1-inch margin of uncovered nori at the bottom

3. Sprinkle with sesame seeds and chili powder, if using.

4. Add avocado slices and saurkraut towards the top of the nori sheet, arranged in one line. Add any other optional ingredients you’d like to use here as well, but don’t make it too bulky

5. Using both hands, start rolling the sheet of nori starting from the top (rolling over your filling).

6. Just as you’re about to reach the uncovered strip of nori at the end, dip your fingertips in some water and dab the nori lightly so it will stick.

7. Eat as a whole, or slice into halves or thick slices using a sharp chef knife. Serve with soy sauce for dipping. ENJOY!
