Coconut Chia Pudding with Rhubarb & Strawberry

Chia pudding is one of our favorite breakfasts, especially when it’s got stewed rhubarb and strawberries on top… SO yum. It’s easy to make, super nutritious, filling, and soothing–a great way to start the day.

Chia is an incredible nutritional powerhouse. This superfood is full of fiber, calcium, magnesium, and omega-3’s–all things we  should be incorporating more of into our diets. We love adding chia to our smoothies, oatmeal, granola, and cookies, but our favorite way to enjoy it is in chia pudding. This recipe is taken to the next level with addition of stewed strawberries and rhubarb… it’s heaven if you ask us.

Chia pudding is particularly amazing because when the seeds are soaked they become more digestible in your body. Also, the soaking process creates a pudding-like consistency, making for the perfect soothing and comforting breakfast. Adding warm stewed rhubarb and strawberries, and some extra shredded coconut and chopped nuts, just seals the deal. Definitely #glowfood approved.

COCONUT CHIA PUDDING WITH RHUBARB & STRAWBERRY: (makes 2)

COCONUT CHIA PUDDING:

Ingredients:

  • 1/4 cup organic chia seeds
  • 1 cup unsweetened coconut milk
  • 3 tablespoons coconut cream (from can)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Directions:

1. Place chia seeds in a medium sized bowl
2. Add coconut milk and coconut cream and stir vigorously until all of the chia is incorporated into the liquid
3. Add maple syrup, vanilla extract, and cinnamon, and whisk again to incorporate
4. Taste to make sure you’ve got enough sweetness / cinnamon / vanilla taste to your liking
5. Cover and place in the fridge for at least 4 hours, stirring occasionally. You get the best results when letting the chia rests in the fridge overnight.

STEWED RHUBARB + STRAWBERRIES:

Ingredients:

  • 1 cup chopped rhubarb
  • 1 cup chopped strawberries
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • pinch of salt

Directions:

1. Wash and trim edges of rhubarb, and cut them into uniform pieces (about 1 inch), to fill 1 cup
2. Wash and cut strawberries into quarters, to fill 1 cup
3. Add the rhubarb and strawberries to a sauce pan on medium heat, and then stir in the maple syrup, vanilla, and salt
4. Stir occasionally for about 8-10 minutes, until the strawberries and rhubarb become soft and liquify. Taste for seasoning and sweetness

 PUTTING IT TOGETHER:

  • Coconut soaked chia
  • Stewed rhubarb/strawberries
  • Shredded coconut
  • Chopped nuts (almonds/walnuts/pecans)

Directions:

1. Whisk soaked chia to make sure there are no clumps
2. Place chia into a serving bowl, top with stewed rhubarb/strawberries
3. Add toppings like shredded coconut and your favorite nuts
4. Enjoy!
